Christie’s Baked Eggs
- 4 eggs
- 10% cream
- roma tomato
- ½ cup chopped greens
- 4 tbsp. Parmesan cheese
- salt and pepper
Preheat oven to 350 F. Serves 4
Grease four ramekins with butter. Place the chopped greens into the ramekins dividing evenly among the four ramekins. Put a tbsp. of cheese in each ramekin and place a tomato slice on top. Whip the eggs and add enough cream to bring it up to 2 cups and salt and pepper to taste. Pour egg mixture into ramekins up to the edge and place to tray large enough to hold the ramekins and water ¾ of the way up the ramekins. Bake for about 30 minutes or until eggs are set. Sit for a few minutes before unmolding.
